Cauliflower & Spinach Wraps

Ingredients
1 Head Cauliflower (or 1 packet cauliflower florets), cut into small pieces.
1 Onion, diced.
Olive Oil
Mushrooms (optional)
1 Teaspoon Crushed Garlic
1 Teaspoon Crushed Chilli (optional)
½ Teaspoon Turmeric Powder
2 Teaspoons Cumin Powder
½ Teaspoon Chilli Powder
½ Teaspoon Salt
1 Handful Spinach (cut finely)
Wrap of Choice
Yoghurt: Garlic, Olive Oil & Salt
Cheddar Cheese (or your own choice)
Method:
1. Add cauliflower, onion & mushrooms (if using) to a pan and coat with olive oil. Allow to cook for 3-5 minutes.
2. Add the garlic, chilli, spices and salt. Allow to cook until fragrant (the spices are well absorbed inthe cauliflower).
3. Add the spinach and cook until spinach has softened. Allow to cool.
4. Yoghurt: mix garlic, olive oil and a pinch of salt to the yoghurt.
5. To a wrap, add a layer of garlic yoghurt, a layer of the cauliflower mix and a layer of cheese. Wraptogether, and toast until crispy and cheese has melted.
